Mrs. Corazon Angeles or “Tia Coring” loved cooking Pancit Malabon for her family and friends. Because of her focus on product quality, those who have tasted her concoction would swear that it is the best Pancit Malabon that they ever tasted. In 1985, Tia Coring finally relented to the prodding of her relatives and friends and began accepting orders for her famous noodle dish.Initially, Tia Coring operated from her house in Pasig. Her newly married son Lito Angeles and his wife Len helped her in operating the business. She would accept orders for Corrie’s Pancit Malabon from residents in the Pasig area and have Lito and her helpers deliver the same. As Corrie’s became more and more famous, orders came from other surrounding localities like Mandaluyong, San Juan, Makati and Quezon City.
